Carrot Cake

What?

This was supposed to be a flop.

I didn’t even know if it would turn out. I tried anyways.

You know what they say, those who persevere get carrot cake.

Right? Isn’t that what it said?

Anyways, lets get back to the carrot cake. This one is moist, delicious and…healthy?

Yep, healthy carrot cake.

Carrot Cake
vegan option
gluten & dairy free

4 eggs or 1 cup applesauce
2 cups coconut sugar
2 tsp vanilla extract
1/2 cup coconut oil
2 cups almond flour
2 tsp baking soda
2 tsp baking powder
1/2 tsp sea salt
2 tsp cinnamon
3 cups grated carrots
1/2 cup raisins

1. Preheat oven to 350 degrees. Grease 9 x 9 inch pan.

2. In a large bowl, mix together eggs, oil, coconut sugar and vanilla extract.
Add almond flour, baking soda, baking powder, salt and cinnamon.
Fold in carrots and raisins.

3. Bake in oven for 40 minutes. Take out and let cool for at least 20 minutes before devouring.
