More cookie dough!
I know, I know…we have a lot of cookie dough posts on this blog…but…
I had to do it.
These cookie dough truffles/bites are very healthy, using stevia and only 1 tbsp of coconut sugar.
Healthy Cookie Dough Bites/Truffles
1/2 tsp vanilla extract
1/4 tsp salt
1 cup almond flour
2 tbsp + 1 tsp stevia
1 tbsp coconut oil melted
2 tbsp almond milk
1 tbsp coconut sugar
1/4 cup dairy free chocolate chips + another 1/4 melted choc chips
1. Combine stevia, coconut sugar, almond flour and salt. Add almond milk, melted coconut oil and vanilla extract plus 1/4 cup chocolate chips.
2. Melt the other 1/4 cup of chocolate chips for topping the truffles.
3. Form dough into balls, spoon melted chocolate over the formed cookie dough bites and place on cookie sheet/flat plate and stick in the freezer or frige.
4. Take out + enjoy! Makes 22 truffles in all. Store them in your fridge, as if it’s left out, it’ll melt.
