Orange Raspberry Breakfast Cookies

Call them scones.

You can call them anything you want, but they’re delicious.

I have dubbed them galaxy cookies because they are so colorful (due to the fruit)!

Sweetened with coconut sugar (which has iron, riboflavin, copper, iron and many other nutrients) and bursting with sweet fruit, these are a good way to start your morning!

I think they taste better the next day because they’re soft + cake-like.

Orange Raspberry Breakfast Cookies

1/2 cup coconut flour
1/2 cup almond flour
1/2 cup coconut sugar
1/2 cup melted coconut oil
1/2 teaspoon Celtic sea salt
1/2 teaspoon baking soda
1/2 cup applesauce
Zest from 1 orange
Juice from 1 orange
1 tsp vanilla extract
1 cup dried raspberries

1. Preheat oven to 350.

2. Mix together dry ingredients, then add wet.

3. Scoop out even portions of dough and use your palm to create a cookie. Bake for 15 minutes.

4. There are no other steps, just enjoy! 🙂
