Healthy Oreos

What is that stuff in the middle? I could never guess.

Well, whatever it is, it’s vegan (surprisingly) but full of sugar + other unhealthy things.

These healthy Oreos taste waaayyy better than their sugary counterparts.

They have not lasted long in my house. The minute I made them, they were gobbled up by my aliens siblings.

Healthy Oreos

For Cookie:

3/4 cup oat flour
1/4 cup plus 2 tbsp cocoa or cacao powder
1/4 cup plus 2 tbsp sweetener of choice
1/4 tsp salt
1/4 tsp baking soda
1 tsp vanilla extract
1/4 cup melted coconut oil
3 tbsp almond milk
2 tbsp maple syrup

For Filling:

1/2 cup coconut butter
1 teaspoon vanilla extract
Sweetener to taste (maple syrup, agave, powdered sugar, stevia, the list is endless)

1. Combine all the cookie ingredients in a food processor. Roll dough into little balls and smash onto a plate (make sure they’re not super big, unless you want a big Oreo).

2. Stick in the fridge or freezer (the freezer is faster) and wait agonizingly for 10 minutes.

3. Meanwhile, throw filling ingredients into the food processor until creamy. Take Oreos out of fridge/freezer and spoon filling onto cookies. Top with another cookie. Wallah! Oreos!

  1. Consider this revision: “make sure they’re not super small, unless you want a small Oreo.” Because come on, who DOESN’T want a big Oreo? 🙂
