Cinnamon Buckwheat Pancakes

Buckwheat.

The name is very deceiving.

Buckwheat doesn’t contain wheat or gluten.

Do a happy dance! 🙂

These buckwheat pancakes are so healthy you can eat them for dinner.

In fact, I did eat them for dinner.

Whoops.

Not!

Cinnamon Buckwheat Pancakes

2 cups oat flour
1 1/3 cups brown rice flour
1/2 cup buckwheat flour
6 tablespoons stevia
1/4 tsp salt
1/2 tsp baking soda
1 tsp baking powder
1 teaspoon cinnamon
1/2 tsp nutmeg
1 1/2 cups almond milk
1/2 cup coconut oil, melted
2 tsp vanilla extract
1/2 cup applesauce
2 mashed bananas

1. Mix all the dry ingredients together. Add wet ingredients and combine.

P.S: If you like more of a buckwheat flavor, decrease one of the flours + sub with buckwheat.

2. Heat griddle to 350 degrees. Pour tablespoonfuls of batter onto the griddle. Flip when browned. Enjoy!

You can easily add fruit if you would like. That would be super yummy!
