I think it might be painfully obvious here on the blog. So many raw desserts!
No bake treats are accessible to everyone and you don’t need an oven!
These no bake chocolate chip cookies take less than a minute to whip up in your food processor, and…the best part?
They’re gluten free, vegan + have no sugar (except if you add chocolate chips).
No Bake Chocolate Chunk Cookies
gluten free + vegan
1 cup cashews or almonds
3/4 cup dates
1/2 tsp vanilla extract
1/2 a chocolate bar, chopped or 1/2 cup chocolate chips or cacao nibs
1. Combine cashews or almonds, dates and vanilla extract in a food processor.
2. Transfer dough to a bowl and mix in the chunks of chocolate.
3. Form into balls then smash down onto a plate to form cookie shapes. Put in the freezer for 10-20 minutes or until firm. Enjoy!
