“They-Don’t-Even-Taste-Like-Spinach” Pancakes


I have to admit that I love a spinach salad, but hate the cooked stuff.

To me it looks lifeless and kind of like seaweed. Tastes a little rubbery. Don’t judge. 😉


But these are such a cool color…why, I convinced my little brother to try them because I told him that it’s what Teenage Mutant Ninja Turtles eat. I also told him they were marshian pancakes!

These taste like banana bread, not a bit like spinach. Even spinach haters will like them.


And with that much color in a pancake, who can even deny that they’re awesome?

“Don’t-Even-Taste-Like-Spinach” Pancakes
gluten + dairy free
can be vegan (see below)

3 eggs (for a vegan version, replace eggs with 3/4 cup applesauce or 3 tbsp flaxseed + 9 tbsp water)
1 handful of uncooked spinach
2 bananas
1 cup almond flour

1. In a food processor, blend the eggs + spinach together until you have a mixture that looks like a green smoothie. Add the bananas and blend again until there are no chunks.

2. Pour the mixture into a bowl and mix in the almond flour until combined.

3. Heat the griddle to 350 degrees. Grease it with earth balance, coconut oil or cooking spray.

4. Pour 1/4 cupfuls of batter onto the griddle and cook until brown on both sides (note: the pancakes will be a little darker than brown since spinach is dark green. don’t worry, they aren’t burnt).
