Banana Bread Cookies.
Have you ever looked at banana bread and said “I wish this was in cookie form.”
Yeah, me neither. 😉
But just in case you ever have, I made you banana bread cookies. With chocolate chips.
Banana Bread Cookies
gluten & dairy free
6 tbsp coconut flour (or oat flour)
6 tbsp mashed banana
3 pinches of salt
1/4 tsp + 1/8 tsp molasses
1/2 tsp + 1/4 tsp vanilla extract
6 tsp sweetener (I used coconut palm sugar)
9 tbsp almond milk (or coconut)
Dairy free chocolate chips
1. Preheat oven to 350 degrees.
2. In one bowl, combine coconut flour and salt. Add mashed banana, molasses and vanilla extract then stir. Add almond milk. Fold in chocolate chips.
3. Drop by teaspoonfuls onto a greased cookie sheet, pressing down the cookies. Stick in the oven for 20 minutes. Take out and enjoy. 🙂
Note: These are not super sweet, so if you like super sweet things these won’t satisfy you.
