Chocolate-Covered Cookie Dough Bites

I don’t know of a single person who doesn’t like cookie dough.

Especially healthy cookie dough.


Please, if you know someone who doesn’t jump (or scream or cry or any human reaction) at the sight of cookie dough, please send them right over. I will fix that. 😉

While cookie dough is certainly delectable, eggs keep us from eating it due to fear of salmonella poisoning. Well, fear no more! These cookie dough bites are gluten free, dairy free + vegan! 🙂


Chocolate-Covered Cookie Dough Bites

1/4 cup earth balance, room temperature
1/2 cup coconut sugar or brown sugar (coconut sugar is really just brown sugar in its raw form)
1 tsp vanilla extract
1 tbsp ground flaxseed
1 tbsp water
1 1/2 cup gluten free oats
2/3 cup cranberries
1/2 cup peanut butter
1 cup dairy free chocolate chips (ghirardelli, enjoy life, ect.)

1. Combine all ingredients except for chocolate chips together in a large mixing bowl.

2. Form into balls and put in freezer to harden for 10-20 minutes.

3. Melt the chocolate chips in a microwave-safe dish and spoon the chocolate over the cookie dough balls, then freeze again.

4. Enjoy! Store cookie dough bites in a container in your fridge.

Now, wasn’t that yummy?

And we didn’t need eggs for it to taste fantastic!

  1. You found me. I’m that single person who doesn’t like cookie dough. However……….this isn’t really very dough-ish since it uses whole grains and no eggs. Chocolate….peanut butter…AND…cranberries…..WINNER!

  2. Mmm! I rarely use eggs anymore since flaxseed works so well as a replacer. I wonder if these could work with something other than oats (which I’m avoiding here at the outset of my GDF)? Quinoa flakes?!
