“Mo peanut butter! Mo peanut butter!”
That’s what my little brother said when he tasted these cookies.
That’s how I knew they were a success 🙂
If you have been reading this blog, you know I love peanut butter. in fact, I think it would be awesome if the world was made of peanut butter. Don’t you? 😉
Well, maybe not everyone agrees with me. Some might wish the world was made of jell-o (Wheeeee!!! Bouncy!!!) or someone I know (*cough* mom *cough*) would wish the world was made of chocolate.
I think I’ll stick to peanut butter.
“Mo Peanut Butter” Cookies
1 1/2 cup peanut butter (crunchy or creamy)
2 1/4 tbsp baking soda
1/2 cup plus 3 tablespoons oat flour
3/4 cup sugar (sucanat, maple syrup, agave, the list is endless)
6 tbsp brown sugar
6 tbsp applesauce
1 1/2 tsp pure vanilla extract
1. Preheat oven to 350 degrees.
2. Throw all ingredients in a bowl. There is no time to waste! Mix them together until fully combined. Drop dough by the teaspoonful onto a greased cookie sheet and bake them for 8 minutes. They might look underdone, rest assured they aren’t. Cool them for 5 minutes. You can store them on the kitchen counter in a plastic bag or in the freezer or the fridge.
