Mini Cobbler

Who likes a cobbler all to themselves?

And so the mini cobbler was invented…
So that all who like cobbler can have their own.
This mini cobbler takes less ingredients and less time…in fact, about only 30-40 seconds to cook!
Since this is a very simple cobbler, I might name it the “lazy” cobbler 😉

Well, enough of me babbling…here is the recipe. 🙂

Personal Cobbler (aka the “lazy cobbler”)
gluten free
vegan

Half of any chopped fruit (Skin, or no skin. You decide. But…after all, this is a lazy cobbler!)
1/2 teaspoon brown sugar
1/2 teaspoon cinnamon sugar (cinnamon sugar is a mix of cinnamon and white sugar)
1/4 cup oats
1 teaspoon maple syrup (you might be able to get away with agave or honey)
2 tablespoons milk of choice (dairy free or otherwise)

For the filling: Chop up fruit of choice and put in a bowl. This will be the bowl for the cobbler.

For the topping: Combine brown sugar, cinnamon sugar, oats, maple syrup and milk of choice in a bowl.
Optional: a pinch of brown sugar to put on top of the cobbler.
Pour the topping over the apples. Spread evenly until it looks something like the picture below.

Microwave for 30-40 seconds (more if necessary).
Enjoy!
You can also top the cobbler with a scoop of coconut ice cream if you wish 😉

You can have this for breakfast or as a dessert. Heck, it could be your dinner!
