Who loves peanut butter?
I do. A lot. That’s why you’re going to be seeing a lot of peanut butter recipes on this blog 🙂
Today, I experimented and came up with a great raw cookie recipe.
I’ll admit it, I’ve never been a big fan of raw cookies. The ones I’ve had tasted have been a bit bland or too chocolate-y.
These cookies are perfecto. Me thinks perhaps a sugar free version is in order? 😉
Unfortunately, I had to use the ole iPad to upload photos of the peanut buttery goodness, so I apologize that the photo quality isn’t stellar
Peanut Butter Cookie Dough Raw Cookies (No Bake!)
gluten & dairy free
1 cup oats
4 tablespoons raisins
1/4 teaspoon vanilla
1 cup peanut butter
1/4 cup dairy free chocolate chips (more if you’re a chocoholic)
2 2/4 teaspoons of maple syrup (you can omit this if, like me, you like peanut butter-y taste)
1 tsp melted coconut oil
Optional: if you like your peanut butter cookies saltier, add 1/8 teaspoon of salt
For a sugar free version, omit the chocolate chips and add 1/4 cup of nuts [peanuts? 😉 ]
Mix all ingredients in a bowl with a spoon until well mixed.
Form into balls, then press down to form cookie shapes (even use cookie cutters if you want to!)
Stick in the freezer or fridge for 30 minutes
Yields 18 cookies
I put mine in the freezer cause I’m impatient 😉
